There are many kinds of bica in Galicia, each with its own characteristics, but this one comes from Castro Caldelas, a beautiful spot in the mountains of Ourense.
It is a rich sponge cake with the strongest buttery flavour you will ever taste. True to the bica tradition, it is topped with a fine crust of cinnamon sugar that adds a light, crisp crunch to every bite.
A classic for long Sunday sobremesas.
