This baked cheesecake truly celebrates the rich creaminess of Bath Soft Cheese, loved for its delicate texture and subtle flavour. The cheese itself is made from pasteurised cow's milk at the beautiful Bath Soft Cheese Park Farm in Kelston, just a stone's throw from our home. If you haven't visited them yet, we wholeheartedly recommend it, it's our favourite place for breakfast.
With every bite, you'll enjoy that smooth, velvety texture that only this local cheese can bring, making the cheesecake a simple yet unforgettable treat.
Keep the cake in the fridge, but take it out at least half an hour before consuming. To fully appreciate its texture and flavour, it should be eaten at room temperature.
