The classic Spanish cheesecake is made with only five ingredients: no flavourings, no biscuit base, and no jam on top. Just cheese, cream, eggs, sugar, and flour (in this case, corn starch so it's gluten-free), baked together. The Burnt Basque Cheesecake is a modern twist on the classic recipe, as it’s baked at a very high temperature to achieve a caramelised top and an ultra-creamy texture.
Keep the cake in the fridge, but take it out at least half an hour before consuming. To fully appreciate its texture and flavour, it should be eaten at room temperature.
